Decking is an important part of the rebuilding process--it ensures the head gasket surface is perfectly flat and parallel to the crankshaft centerline. Note the block is attached to the machine by a fixture that runs through the main bearing bores--that's one of the reasons they must be in perfect alignment and why line honing is an important step in the process.
